Step by step recipe


Stage 1 - 20 min.
Purple artichokes braised in white wine : Stage 1
Prepare 3 kgs purple globe artichokes.

Prepare 150 g spring onion (scallion) and chop.

Stage 2 - 2 min.

Heat 6 tablespoons olive oil in a frying pan over medium heat. When hot, add the chopped onions, salt and pepper. Cook for 1 or 2 minutes without colouring.

Stage 3 - 2 min.

Add the artichokes, salt pepper and stir together.

Stage 4 - 1 min.

Pour in 9 glasses dry white wine to give about 1 cm (1/2 inch) depth in the pan.

Stage 5 - 15 min.

Bring to the boil, then turn down the heat to minimum. Leave to cook gently...

...until the wine has completely evaporated. Check that the artichokes are tender.
