Purple artichokes, cauliflower and mozzarella combined with bechamel sauce in a gratin to cheer up the end of summer.

For 4 people, you will need:
  • 1 cauliflower 3 cups cauliflower
  • 2 purple globe artichokes 2 cups + 2 tablespoons purple globe artichokes
  • 3 butter 1 ½ tablespoon butter
  • 4 Bechamel sauce 1 13 cup Bechamel sauce
  • 5 mozzarella 1 cup mozzarella
  • 6 salt salt
  • 7 pepper pepper

Step by step recipe


Stage 1 - 10 min.
Harvest Gratin
Prepare 3 cups cauliflower.

Stage 2 - 5 min.
Harvest Gratin
Cook in plenty of boiling salted water just until barely tender.

Set aside.

Stage 3 - 10 min.
Harvest Gratin
Prepare 2 cups + 2 tablespoons purple globe artichokes.

Stage 4 - 5 min.

Boil in salted water and, like the cauliflower, only until barely done.

Stage 5 - 1 min.

Preheat the oven to 390°F (200°C).

Butter a gratin dish.

Stage 6 - 2 min.
Harvest Gratin
Arrange a layer of cauliflower in the bottom, then a layer of artichoke.

Salt and pepper lightly.

Stage 7 - 2 min.

Pour half the bechamel sauce over.

Stage 8 - 2 min.
Harvest Gratin
Then add the rest of the cauliflower and pour the remaining bechamel over.

Stage 9 - 3 min.

Top with 1 cup mozzarella in thin slices.

Lightly salt and pepper once more.

Stage 10 - 35 min.
Harvest Gratin
Bake for 30 to 40 minutes...

Stage 11

...until the top is nicely browned.
Remarks
If you don't have any purple artichokes, use a normal artichoke sliced into rounds.
Keeping: Several days in the fridge, covered with plastic film.
