Step by step recipe


Stage 1 - 5 min.
Hummus
In the bowl of a mixer or blender, pour 3 ½ cups tinned (canned) chickpeas drained, juice of 2 lemons and a half zest, 4 tablespoons tahini (sesame paste), 2 cloves garlic in pieces, 2 teaspoons turmeric, 6 tablespoons olive oil, salt and pepper.

Stage 2 - 5 min.
Hummus
Switch on the mixer.

Stage 3 - 1 min.
Hummus
During mixing, pour a trickle of cold water...

Stage 4
Hummus
...until you get a smooth and even purée.

Check seasoning.

Stage 5 - 5 min.
Hummus
Put in small dishes with a dash of olive oil. Serve it with pitta bread (of course!) or toasted baguette slices.
Remarks
Quantities of olive oil, tahina (sesame paste) and lemon juice can be altered to taste.

If houmous is not being served immediately, it must be refrigerated with a fine coating of olive oil on top, in a sealed container otherwise it will darken. You can also add a little vitamin C.

Cooking tip: instead of water in stage 3, you can use the water in the can of chickpeas.
Keeping: several days in the fridge, protected by a plastic film.
