Just a classic prawn cocktail with avocado? Oh, no! The prawns in this recipe are sautéed briefly to enhance the flavour, then mixed with a curry mayonnaise.

Step by step recipe


Stage 1 - ⌛ 10 min.
Avocado with Sautéed Prawns  : Stage 1
Prepare 4 avocados, dice and put in a bowl.

Sprinkle with the juice of a lime, then salt and pepper and mix well.

Set aside.

Stage 2 - ⌛ 5 min.
Avocado with Sautéed Prawns  : Stage 2
Peel 400 g cooked prawns and cut into small chunks.

Stage 3 - ⌛ 4 min.

Pour 2 tablespoons olive oil into a small frying pan on high heat. When really hot, add the prawns and fry.

Set aside.

Stage 4 - ⌛ 2 min.

Mix 150 g mayonnaise and 1 teaspoon curry powder to make the curry mayonnaise.

Stage 5 - ⌛ 1 min.

Mix the curry mayonnaise with the prawns, once they have had time to cool slightly.

Stage 6 - ⌛ 4 min.
Avocado with Sautéed Prawns  : Stage 6
Begin the assembly: serve the salad in a ramekin or glass, beginning with a layer of avocado 2/3 the height of the dish.

Stage 7 - ⌛ 4 min.

Add the prawns in mayonnaise on top and garnish with a parsley or coriander leaf.

Serve within half an hour (or the mayonnaise will start to darken a little, which looks less attractive).
Remarks
If you don't have a lime, you can use lemon juice instead.
Keeping: Should be eaten within half an hour.
