Step by step recipe


Stage 1 - 5 min.
Fried cheese toasties with avocado
Grate ½ cup Mimolette and ½ cup Comté cheese, mix together and set aside.

Stage 2 - 3 min.

Prepare 1 avocado and slice thinly.

Stage 3 - 2 min.
Fried cheese toasties with avocado
Cut 8 slices bread.

Stage 4 - 3 min.

Melt ¼ cup butter and brush over one side of each slice.

Turn the bread over.

Fill half the slices with the grated cheese mix.

Stage 6 - 2 min.

Put the other slices on top, butter side up.

Note that these sandwiches are made with the butter on the outside.

In a frying pan, fry the sandwiches on both sides over moderate heat.

Put a cheese toastie on each plate, top with sliced avocado, then salt and pepper, and drizzle with a little olive oil and lime juice.

Serve right away.
Remarks
For the bread, choose a rustic sourdough if possible; seeded and granary-style are good.

This works with other cheeses, so use whatever you have to hand.
