It might seem unlikely, but Brussels sprouts are very good raw, like in this salad, pepped up with lemon and Parmesan.

Step by step recipe


Stage 1 - 10 min.
Brussels sprout salad
Trim the outer leaves off 2 23 cups Brussels sprouts, then rinse.

Stage 2 - 15 min.
Brussels sprout salad
Slice the sprouts very thinly (the ideal way is with a mandolin, but a sharp knife will do fine) and put in a salad bowl.

Stage 3 - 1 min.
Brussels sprout salad
Add the chopped parsley and the zest of half the lemon.

Stage 4 - 2 min.
Brussels sprout salad
Add 1 ½ tablespoon Parmesan (Parmigiano Reggiano), grated or in shavings made with a vegetable peeler.

Stage 5 - 1 min.
Brussels sprout salad
Mix together.

Stage 6 - 2 min.
Brussels sprout salad
Squeeze 1 lemon, add salt, pepper and 5 tablespoons olive oil. Mix well.

Stage 7 - 1 min.
Brussels sprout salad
Pour over the salad and mix again.

Your Brussels sprout salad is ready.
Remarks
If you use a knife to slice the sprouts, cut them in half first to make it easier.

It is worth trying this with lime instead of lemon for a very different flavour.
Keeping: Should be eaten the same day.
