This combination of spring cabbage and leeks, cooked separately then mixed with rice, is a simple recipe and everything can be prepared in advance.

Step by step recipe


Stage 1 - 10 min.
Rice with spring greens
Prepare 0 kg 5 g green cabbage raw.

Stage 2 - 5 min.

Cook in a large pan with 2 tablespoons olive oil until just tender, then salt and pepper.

Transfer to a plate and set aside.

Stage 3 - 15 min.

Stage 4 - 5 min.

Cook in a large saucepan with 2 tablespoons olive oil until just tender, then salt and pepper.

Transfer to the plate with the cabbage and set aside.

Stage 5 - 2 min.
Rice with spring greens
Prepare and finely slice ½ shallot.

Stage 6 - 1 min.
Rice with spring greens
Pour 2 tablespoons olive oil into a large pan on medium heat. When good and hot, add the sliced shallot, salt and pepper.

Cook for 1 minute without colouring.

Stage 7 - 1 min.

Add the vegetables...

Stage 8 - 5 min.

...then 0 kg 11 g cooked rice.

Mix well and leave to reheat through, then check the seasoning.

That's all there is to it, though you can add a drizzle of olive oil or lemon juice (or both) before serving.
Remarks
You can use different green vegetables if you prefer, or whatever you have to hand (peas, mangetout, etc.).
