Mixed salad is one of those simple but delicious summer recipes which go so well with a barbeque. It's a mix of several fresh vegetables, herbs and French dressing (vinaigrette).

Step by step recipe


Stage 1 - 10 min.
Mixed salad
Peel 2 cucumbers, dice small, put in a strainer over a bowl and sprinkle with.

We do that to remove the excess water from the cucumber.

Stage 2 - 10 min.

Peel 8 tomatoes, dice small.

Stage 3 - 10 min.

Take 400 g mushrooms, cut off the stalks and keep only the caps.

Peel, cut in two lengthways, then slice thinly.

Put in a bowl, add 1 lemon juice and mix well.

Stage 4 - 10 min.

Wash and drain 2 lettuces.

Take a handful of leaves, roll and slice thinly. Do this with the whole lettuce to produce fine ribbons.

Stage 5 - 10 min.

Peel 2 avocados, cut each half in small dice.

Stage 6 - 2 min.

Put diced avocado on mushrooms, add 1 lime juice and mix well.

Stage 7 - 5 min.

Chopp finely 2 spring onions (scallions) and 2 bunches chives.

Stage 8 - 2 min.

Put everything in a salad bowl: lettuce, chives, onion, mushrooms, avocado, cucumber and tomatoes.

Stage 9 - 1 min.

Add French dressing to taste, mix well.

It's ready.
Remarks
Mixed salad can be varied infinite ways: you can add, remove, or change anything you like. Follow your imagination, or what you have in the fridge. The basic principle is this: mix fresh ingredients cut small with herbs and French dressing.

From there on, anything goes. Some suggestions: small cubes of cheese (feta, gruyère, cheddar), bacon or ham, cooked potatoes, etc.

Same thing for French dressing, you can use the classic one, or change the oil (sesame, walnut, ...), vinegar (balsamic, cider, maple, lime juice...), or add other tasty things: teaspoon of soya sauce, dash of Tabasco,... Even all of these!
Keeping: Several days in the fridge, in a closed jar.
