Slices of sautéed aubergine and the lovely yellow colour from the curry spices bring a hint of India to this rice dish, given a twist with a little fried ham.

Step by step recipe


Stage 1 - 5 min.
Madras rice
Rinse 1 lb + 15.7 oz egg-plant or aubergine and cut into fairly thick slices.

As you can see in the photo, I am using the delicious, long, purple aubergines that are sometimes available. I find them more interesting than the usual dark variety.

Stage 2 - 8 min.
Madras rice
Pour 9 tablespoons olive oil into a large frying pan on high heat. When really hot, add the sliced aubergines.

Brown on both sides, then salt and pepper at the end of cooking.

Set aside.

Stage 3 - 2 min.
Madras rice
Use the same pan to fry the ham on both sides.

Set aside.

Stage 4 - 5 min.
Madras rice
Still using the same pan, without washing it (to make the most of the cooking juices left), pour in 1 lb + 10.4 oz liquid cream.

Bring to the boil while deglazing the bottom of the pan thoroughly, then add 3 tablespoons curry powder and mix well.

Stage 5 - 1 min.
Madras rice
Add 0 kg 4 g cooked rice and mix well...

Stage 6 - 5 min.
Madras rice
...then leave to reduce a little until the rice has absorbed most of the cream.

Stage 7 - 2 min.
Madras rice
Finish by adding the ham and aubergines.

Stage 8
Madras rice
Serve without delay.
Remarks
If you find the curry flavour a bit too strong for your liking, you can use turmeric on its own instead.
