This salad is a way to make the most of the first baby courgettes (if you can get them). The crunchy little darlings are mixed with shredded lettuce, hard-boiled eggs, tinned tuna and diced cheese.

Step by step recipe


Stage 1 - 10 min.
Springtime mixed salad
Prepare 900 g lettuce and shred.

Stage 2 - 3 min.

Thinly slice the courgettes (use the tiniest ones if you can).

Stage 3 - 4 min.
Springtime mixed salad
Slice 6 hard-boiled eggs and thinly slice 3 spring onions (scallions).

Stage 4 - 3 min.
Springtime mixed salad
Dice 150 g cheese.

Stage 5 - 2 min.
Springtime mixed salad
Put all these ingredients into a salad bowl, add 300 g tuna in oil...

Stage 6 - 1 min.
Springtime mixed salad
...then the chopped parsley and chive flowers.

Stage 7 - 2 min.
Springtime mixed salad
Finish by adding 15 tablespoons French dressing (vinaigrette) and mix well.

Your mixed salad is ready.
Remarks
For a fresher flavour, replace half the vinaigrette with lemon juice.
