Step by step recipe


Stage 1 - 20 min.
Penne with purple artichokes
Prepare 3 purples globe artichokes.

Stage 2 - 5 min.
Penne with purple artichokes
Pour 1 tablespoon olive oil into a frying pan on high heat. When really hot, add the artichokes and sauter briefly, just until they are lightly browned all over.

Stage 3 - 5 min.
Penne with purple artichokes
Add ½ sprig thyme to the pan with ½ garlic clove and ½ shallot (peeled and chopped).

Stage 4 - 1 min.
Penne with purple artichokes
Pour in 1 glass dry white wine, salt and pepper, then turn down the heat and leave to cook...

Stage 5 - 10 min.
Penne with purple artichokes
...until the white wine has completely evaporated.

Set aside.

Stage 6 - 8 min.
Penne with purple artichokes
Cook 200 g Pasta (penne).

Stage 7 - 1 min.
Penne with purple artichokes
Mix the pasta and artichokes (remove the thyme and discard it), add a trickle of olive oil...

Stage 8 - 2 min.
Penne with purple artichokes
...and the grated 25 g Parmesan (Parmigiano Reggiano).

Mix and serve piping hot.
Remarks
You can replace the penne with any pasta you like.
Keeping: A few days in the fridge, covered with plastic film.
