Cassoulet-style shepherd's pie.
You may well have come across hachis parmentier, the French version of shepherd's pie. Here's a variation using puréed haricot beans, inspired by another classic French dish: cassoulet.

For 6 people, you will need:
  • 1 white beans 1 kg white beans
  • 2 cream 50 g cream
  • 3 cooked meat 500 g cooked meat
  • 4 grated cheese 50 g grated cheese
  • Total weight: 1,600 grams

Step by step recipe


Stage 1 - 10 min.
Cassoulet-style shepherd's pie.
Pass 1 kg white beans (cooked beforehand or from a tin) through a vegetable mill into a saucepan...

...to make a bean purée.

Stage 3 - 5 min.
Cassoulet-style shepherd's pie.
Put on medium heat. When hot, stir or whisk in 50 g cream.

Salt, pepper, then check the seasoning.

Set aside.

Stage 4 - 5 min.
Cassoulet-style shepherd's pie.
Preheat the oven to 390°F (200°C).

Butter a gratin dish and arrange 500 g cooked meat in the bottom.

Stage 5 - 2 min.

Spread the bean purée over the meat.

Stage 6 - 2 min.
Cassoulet-style shepherd's pie.
Top with 50 g grated cheese.

Stage 7 - 30 min.
Cassoulet-style shepherd's pie.
Bake for about 30 minutes until nicely browned.
Remarks
For a crustier topping, you can add a little home-made breadcrumb coating and mix this with the grated cheese in stage 6.

For something closer to a real cassoulet, use chunks or slices of sausage instead of the meat.
Keeping: 1 or 2 days in the fridge, covered with plastic film. Freezes very well.
